I’ve been to Dubrovnik twice now, and on my recent visit, I stayed for over a week. I’ve stayed inside the Old Town and outside the Old Town, and both locations have their pros and cons.
The historic walled Old Town is a unique place to stay, but it is car-free, so you will need to be prepared to haul your luggage down narrow cobblestone streets and up staircases to reach your accommodation. Everything inside the Old Town is also at least twice the price as it is outside (groceries, cafes, shops, etc.)
Staying outside the Old Town will get you more space, and access to better beaches. Most hotels outside the Old Town are within walking distance or a short drive, so you can still get there easily.
